I can still remember the amazing smell as I entered the room to listen to Sharon A. Kane, for her talk on gluten free sourdough bread. GLUTEN FREE SOURDOUGH BREAD! The voice in my head screamed! No more guilt and sore knees? The only thing that knocks me off my gluten free wagon is the come hither sirens call, of great sourdough bread slathered with butter! Could Gluten free sourdough be true? I sure hoped so! Sharon takes on the challenge of “it can’t be done” and succeeds.

I sprung for her book. Her talk is full of helpful tips for success and audience Q&A .Highly recommended and inspirational for those trying to go gluten free.

The Art of Gluten-Free Sourdough Baking

Creating a nutrient-dense, properly fermented Gluten-Free sourdough bread made from only pure food ingredients is possible!! Sharon will discuss the differences in technique between her Gluten-Free Sourdough Technique and traditional wheat and rye sourdough techniques. She will discuss how to create, maintain and work with gluten-free sourdough starters made with various flours. She will also demonstrate the simple techniques that make successful gluten-free sourdough breads and muffins. We will talk about the properties of gluten-free flours and what each contributes to the finished sourdough product.

Sharon A. Kane is the author of The Art of Gluten-Free Sourdough Baking. After mastering old fashioned 7-day Rye sourdough bread she learned she was gluten-intolerant. Trying to find a commercial bread that was made within the Weston A. Price parameters proved difficult. She wanted bread that used whole grain flours without commercial yeast, chemical leaveners, gums or sugars. She became determined to create gluten-free bread that was prepared and fermented according to Weston A. Price principles. After one year of much trial and error she succeeded with her first loaf. Five years later she has written this book and developed a video course to share her work.  Her articles have been published in Wise Traditions and Spirit of Change. Sharon is a piano teacher at an alternative school, a hands-on energy healer and teaches Gluten-Free Sourdough Baking Classes and Allergen-Friendly Traditional Cooking. She and her husband, Allen, have an organic garden in Eastern Massachusetts. They use overwinter cold frames and begin eating out of their garden in mid March. Sharon ferments anything from the garden at least once and has succeeded in fermenting vegetable parts that usually end up in the compost. Her other book, Lacto-Fermentation Through The Seasons, features 21 recipes that start with Spring Rhubarb, move through Summer Daylily Buds and on to the much-loved old standards of late summer and fall, cucumbers and sauerkraut. The Eugene Sudbury School offers many games and play areas for children to enjoy during the movie.  There will be one or more adults available to spend time with the children in a separate room so that parents (and non-parents) may concentrate on the presentation.

Nourishing Our Children is a beautifully produced introduction to the work of Weston A. Price and the nutritional principles presented in Nourishing Traditions.  Although it is aimed at parents who are still feeding young children, the information is important for everyone.  You do not need to be a parent to come.

In part one we learned about disorders of the gut. We are looking forward to part two because it tells us how to improve the health of the gut and eliminate the symptoms and diseases. Come to the DVD showing of Natasha Campbell-McBride, MD, discussing her GAPS Diet, and learn how to bring yourself to good health.  Dr Campbell-McBride will be talking about GAP Syndrome or GAPS, which stands for Gut And Psychology / Gut And Physiology Syndrome.

Held at the office of Cherie Anello, Certified GAPS Practitioner and Nutritional Therapy Practitioner. We are forming a support group for people who are following the diet, and have already been exchanging food preparation techniques and recipes.

We would like it to be accessible to parents with young children, so I have arranged with my son’s school to host the events. They have a great facility, with play areas for children that will be available during the DVD.

About DR. Campbell-McBride:

Natasha Campbell-McBride, MD, MMedSci (neurology), MMedSci (nutrition), graduated with honors as a medical doctor in 1984 from Bashkir Medical University in Russia. In the following years she gained a postgraduate degree in neurology.After practicing for five years as a neurologist and three years as a neurosurgeon, she started a family and moved to the UK. Fairly shortly after that her son was diagnosed autistic, which prompted an intensive study into causes and treatments of autism. It was during this time that Dr. Campbell-McBride developed her theories on the relationship between neurological disorders and nutrition. She then completed a second postgraduate degree in human nutrition at Sheffield University, UK.

Having successfully treated her son, Dr. Campbell-McBride has returned to practice in 2000 and runs the Cambridge Nutrition Clinic. She has specialized in using nutritional approach as a treatment, and has become recognized as one of the world’s leading experts in treating children and adults with learning disabilities and other mental disorders, as well as children and adults with digestive and immune disorders.

Ok so the first thing you notice about Denise Minger is how young she looks, OK is. How could she have had time to study in depth the huge subject she’s’ taken on? Than she starts to speak and if her infectious giggle doesn’t endear you to her, the sense she talks will. Denise is self taught, and self motivated by personal health issues. Her reanalysis of the data put forward by the now highly touted book, ”The China Study”, sparked a public debate with its author T. Colin Campbell. She is a Portland based food blogger. Her lecture at the 2012 Myth busters Conference, shares her insight .into what the data really says. Infotainment with a lively Q&A after that sheds even more light on how to twist these studies.

Denise Minger is a Portland-based writer, teacher, and nutrition blogger currently working on her first book, “Death by Food Pyramid.” Her website, RawFoodSOS.com, aims to dispel nutrition myths and reexamine conventional beliefs about food. In 2010, Minger’s reanalysis of China Study data received widespread publicity in the health community and sparked a public debate with T. Colin Campbell, author of “The China Study.”

The China Study: Fact or Fallacy? The China Study is often cited as “proof” of the harmfulness of animal products and the superiority of a vegan diet. Yet despite boasting the title “Grand Prix of epidemiology,” this large-scale study has been widely misinterpreted and distorted. This lecture examines what the original China Study data really says about diet patterns and health, and also explores the real reasons vegetarian and vegan diets appear beneficial in population studies.

“Fat Myths”

Conventional medicine and the main stream media all agree: dietary fat is the cause of all health ills.  Yet traditional the diets of healthy traditional people varied greatly in the amount of fat, some going to considerable risks to obtain saturated animal fats.

Are low-fat diets healthy?  Are high-fat diets healthy?  What about the dangers of arachidonic acid or benefits polyunsaturated oils?  What about studies that report to show that dietary fat causes heart disease?  What did those studies show?  What does the science really say?  Chris Masterjohn tackles these difficult questions with humor and a well-grounded basis in science.  This is a “must see” presentation for anyone following a low-fat diet or confused about fats.

Good Fats, Bad Fats: Separating Fact From Fiction
In the modern era, the nutritional establishment has created the tall tale of a mythical transition from a low-fat diet associated with poverty to a high-fat diet associated with affluence and has considered this mythical increase in fat intake to be the scourge of modern, disease-producing diets. The establishment has likewise promoted the use of polyunsaturated vegetable oils to supply our needs of “essential fatty acids” and to lower blood cholesterol. Others have maintained with equal vigor that using large amounts of fat is necessary to displace harmful carbohydrates, and that this is the key to vibrant health. Traditional, health-promoting diets, however, varied widely in their composition, some being very low in fat, others deriving over 50 percent of their calories from saturated fat alone. Healthy, non-pregnant, non-lactating adults require essential fatty acids in infinitesimal amounts. Growing children, pregnant or lactating women, and adults who are recovering from injury or suffering a degenerative disease require greater amounts of these fatty acids, but acquire them best from animal products. The use of vegetable oils likely promotes heart disease despite lowering cholesterol. Saturated and monounsaturated fatty acids play essential roles in our bodies, but we can synthesize them from carbohydrate, an option on which many healthy groups have relied. Fats provide essential nutrients and aid in the absorption of nutrients from other foods. It is the overall nutrient density and nutrient bioavailability of the diet, however, and not the specific content of fat, that produces health.

Chris Masterjohn is creator and maintainer of Cholesterol-And-Health.Com, a web site dedicated to extolling the benefits of traditional, nutrient-dense, cholesterol-rich foods and to elucidating the many fascinating roles that cholesterol plays within the body. Cholesterol-And-Health.Com is home to his blog, The Daily Lipid. Chris is a frequent contributor to Wise Traditions, the quarterly journal of the Weston A. Price Foundation, is a perennial speaker at the annual Wise Traditions conference, and writes a second blog on the foundation’s web site, Mother Nature Obeyed. Chris is a doctoral candidate in Nutritional Sciences at the University of Connecticut. He has authored three peer-reviewed publications including a hypothesis on the molecular mechanism of vitamin D toxicity published in Medical Hypotheses, a letter to the editor published in the Journal of the American College of Cardiology challenging the conclusions of a widely publicized study claiming to show adverse effects of eating coconut oil, and a letter to the editor published in The American Heart Journal arguing that drugs used to raise HDL-cholesterol should not be considered safe until their potential adverse effects on vitamin E metabolism have been studied. He has also recently authored a human study on the effects of vitamin E on sugar metabolism that has been accepted for publication in the Journal of Nutritional Biochemistry, and a review on nonalcoholic fatty liver disease accepted for publication in Nutrition Reviews. Chris plans on graduating with his doctorate in the summer.
